🐐 Goats – Niche but growing! Used in artisan and specialty cheeses, goat cheese (Chèvre in French) is prized for its tangy flavor and digestibility - even many lactose-intolerant folks can enjoy it.

🐑 Sheep – Smaller presence, but high-value. Sheep’s milk is used in premium cheeses like Greek Feta, French Roquefort, Spanish Manchego, and Italian Pecorino Romano (Pecorino means sheep in Italian). It’s rich in fat and solids, perfect for aged cheeses.

The goal? Chase an 7-pound wheel of Double Gloucester cheese as it hurtles downhill at speeds up to 80 mph.

Started in the early 1800s, the Cheese Rolling contest has evolved from a quaint local oddity into a global spectacle. People come from all over the world, not just to watch, but to compete. Broken bones and bruised egos are all part of the package — and so is an unshakable sense of glory.

In a world where food competitions usually involve eating, this one demands velocity, endurance, and sheer disregard for personal safety. The cheese always wins — but those brave enough to chase it walk away (if they can walk) with stories they’ll tell forever.

It’s muddy and magnificently British. And like a good cheese, it only gets better — and weirder — with age.

🧀🐛 Casu Marzu: Italy’s most infamous cheese is alive wriggling with maggots… and illegal. Made only on the island of Sardinia, Italy, Casu Marzu starts as traditional pecorino (a hard sheep’s milk cheese). But here’s where it gets wild: it’s left uncovered while it ages so the cheese fly (Piophila casei) can lay eggs inside. As the larvae hatch (maggots), they digest the fats, turning the cheese into something soft, spreadable, and powerfully pungent.

📍 Where it’s made: Sardinia’s warm climate and salty sea air create ideal conditions for this extreme fermentation. It's a tradition deeply tied to rural island life, passed down through generations.

⚠️ Why it’s banned: Casu Marzu is officially labeled the “world’s most dangerous cheese” by Guinness World Records. It’s illegal to sell in the EU and the U.S. due to health risks — especially if eaten after the maggots die, which can make it unsafe.

💍 But in Sardinia? It’s still revered. Casu Marzu is often served at weddings and milestone celebrations, symbolizing generosity, rarity, and cultural pride.

🇮🇹 Italy’s cheese culture is incredibly regional — from the Alps to Sicily, hundreds of cheeses are protected by tradition and geography. Casu Marzu is one of the most extreme, and one of the most fascinating.
